Ooo willow they sound amazing! I'm dying to get started cooking for tonight! Doing a variety of curry dishes! Lentil Dahl, saag aloo and OHs having a jar of jalfrezi! He's been saying he wants to try lentils, so I thought that was the best way to introduce them haha! I've been amazed how the girls have taken to different foods! They're in love with almond milk and K loves lentils and kidney beans, which I always hated growing up!
 
2 cups of almond flour
2 cups of cacao powder
3/4 cup of coconut sugar (if you like your biscuits crumbly) OR 3/4 cup of sweet freedom (if you like them chewy)
3/4 cup coconut oil, warmed to liquid
1 tbsp of peppermint extract
1tsp vanilla extra

Hand stir together into a dough and then shape into cookies. Place into the fridge to cool/set.

Whilst they are cooling down you need to make the chocolate coating.

2/3rds cup coconut oil, warmed to liquid
1/2 cup cacao poweder
3 generous tbsp of sweet freedom

You need to really blitz this together hard in a blender to get it smooth. Then dip your cooled cookies in to coat them in chocolate and pop them on a baking paper lined tray in the fridge and they will be ready in 30 minutes.

You can use maple syrup in place of sweet freedom, or agave nectar. You can also use coco powder in place of cacao and normal sugar in place of coconut if your not interested in the raw/nutrition factors. You can also buy almonds floury enough from Tesco in lilac packets down the home baking isle if you've not got flouring equipment.
 
I hate almonds, could I use other nuts?

MMG&I, great idea! My children love the coconut milk! They weren't a fan of soya or hazelnut (not tried almond-see above! lol) hazelnut milk is my new obsession!
 
Where would I find coconut oil?! Is it something you'd e likely to find in tesco/morrisons?! I need to do some baking, I'm itching to haha!

MMG&I, the guys I order fruit and veg from sell it, I've never seen it in supermarkets. If you really wanna bake, the Vegan Chocolate Cake I make is AMAZING and you might have most of the stuff in already! S loved it and the children adore it too!
 
You can get it from most places which sell whole foods. It's not to hard to find, but I've not seen it in Tesco either.

The mint chocolate cookies just taste like chocolate, mint, and more chocolate. Yum!
 
I get my coconut oil from Tescos sometimes, they do stock it (but may not have it in smaller shops). In fact I'm on my way to Tesco now to get coconut oil to make a kiwi pie with the new Klotted Kream I bought :)

Physically and mentally! I'm mainly eating vegan, but am not being properly fussy over it, so will still have brews people make me with normal milk and normal chocolate etc! But at home I have almond milk, which I love! I've got some hazelnut milk waiting to try too!

I hate the health implications of dairy as well as the cruelty plus I adore hazelnuts! :D I've really liked some vegan chocolate and hated others!
 
You see as good as that looks I can't touch that because it's all full of sugar, flour and processed margarine :(
 
Well sugar I can with unrefined sugar, but then cooking it takes out all the enzymes etc that I need to help me digest it anyway. Flour is tricky as recipes which call for it are hard to replicate with alternatives as it's the starch in flour which gives the texture, and starch I can't digest.

Do you eat mostly raw? I'd love to go raw majority but is it expensive do you find?
 
MMG&I it is honestly, hands down, the best chocolate cake I've ever eaten, that includes things like 'devils' choc cake etc!!!
 
I'm defo trying it! Just having a brew with hazelnut milk - it's amazing! And daydreaming about opening a health food shop :lol: there's none round here and it's the sort of area you'd think they'd be really popular! The nearest one shut cos there was a waitrose opening across the road and they thought it was too much competition :(
 
Oh that's a real shame! We have one in the nearest town but it's just a regular Holland and Barretts. Actually, you know what, I can not get used to tofu! Anyone have any tried and tested recipes?
 
Have you tried smoked tofu? I don't eat a huge amount of tofu, but the smoked tofu is great! I use silken tofu in some desserts

Goodness Direct is a good online shop for health foods if you don't have one nearby
