Gruyere cheese

I've got an Annabel Karmel book and some of her recipes uses Gruyere cheese, but when I went to the supermarket, I found that it is made from unpasteurised milk. Aren't babies only supposed to have pasteurised cheeses? And from her recipes, the Gruyere is added off the heat so is that hot enough to kill bacteria?
