Curry Recipe anyone?

Hi there,

looking for a nice simple but tasty chicken (or beef) curry recipe that I can make for me and my OH... and possibly my little one as well, providing its not too spicy.

Any recommendations please? as I need to know what spices to buy!!! Cupboard is slightly bare in that department!

For spices you will need...
turmeric powder
ground cumin seed
ground coriander seed

You can add some ginger too, but I dont like it :puke:

Probably use half a teaspoon of each. Some chopped garlic (or you can buy garlic puree), some blitzed (in the blender) chillis and a tin (or two so it isnt too spicy) of chopped tomatos. oh and some sliced/diced (whichever you prefer) onions.

Heat oil in a pan and soften the onions, garlic, chilli and ginger (if using). Add the spices and cook for a couple of min on a low(ish) heat stirring it so they dont burn... add some water if you want to save it burning - at this point you can blend it all if you want a smooth curry (defo add water if you are blending) - leave it as it is if you want it chunky. Add the chopped tomatoes and cook for 30min on a low heat.

If you want it more korma(ish) add a tin of coconut milk to it - this will make it milder too! :)

Don't know if it counts as a recipe as it's sort of cheating, but...

Thai Green/Red Curry (medium spice, the green is a bit milder)
50g Green or Red curry paste
250g ish of diced meat (chicken best for green, beef or pork best for red)
1 tin coconut milk
1 pepper of green or red

Cook the meat in frying pan/wok til edges are all done but don't worry about the insides.. mix in the curry paste.. cook for another few minutes to get the flavour into the meat. Chuck in the pepper (chopped into strips or squares), then the coconut milk and leave to bubble/simmer til you think the meat's cooked inside.

That makes 2 good portions or 3 medium ones. Ryan's tried the green before and been fine with it :D

If thats cheating cos of the curry paste, you can make the green one with green pepper, lemongrass, coriander, chopped chillis, green oxo and plain yogurt instead of coconut milk (no set sizes, just chuck it all in..)
 
made Sarahs Curry! very yummy, and I made it nice and mild so Livvy could have it too... thank you.

Will be trying Leckershells next! I LOVE Thai Green!

That's excactly how I make my Thai green! :) It's yummier than anything you get in a jar. And you only need a little paste so it lasts ages :)
