Todays' Blackboard Specials...

I made Oscar Butternut Fritters with Cinnamon tonight. Very nice and great for them eating by themselves.

2 butternuts peeled, diced and cooked until soft
2 eggs
self-raising flour
1 teaspoon baking powder

Mash the butternut. Beat the eggs and add to the mash. Now, I recon about 300gr of flour should be enough, but you can always add more if needed. It has to be a sloppy mixture - leaning on the stiffer side.
Add baking powder.

Heat a non-stick pan. Drizzle of olive oil and put dollops of mixture in the pan. Cook until nice and brown. Turn over and flatten with egg-lifter.

Put on a flat plate and sprinkle both side with cinnamon or cinnamon & sugar. Deeee-licious!!!

These fritters look like Scottish Pancakes/Griddlecakes.

Enjoy!

ps. Wicked with Roast Chicken and green veggies! :D

Thanks!

I love giving Oscar fabby food - my other two are fussy little buggers! I didn't have the knowledge then, that I have now.... old woman that I am! Anyway - SA's have some really nice ideas with food, especially veggies.

To all custard lovers...

When you make this custard and you find it too runny (it's more of a pouring custard) then you can thicken it by simply adding another egg yolk or two (always beaten).

Good luck.... let me know how you get on!!

That's a good idea! Be careful though - it's the egg white that we need to be wary of in babies - that's usually what can be the cause of an egg alergy.
I'll post a recipe for good old Meringues! They're yummy with fresh fruit and ice-cream!

Glad everyone enjoyed the custard!

I thought it was the yolk that could cause allergies
