Hi

I just made Isaac an omlette for lunch with left overs from the fridge. I cooked chopped up new potato, courgette, onion and tomato with a little olive oil, a little knob of butter, salt and pepper then added the eggs and a milk.

Years ago my sister had a spanish friend whose mum used to make my mum the best spanish omlette. Just wondered if any of you (squig) have a good recipe for spanish omlette? I think his mum used to put it in the oven but I can't remember.

I tend to do variations on a Spanish omelette to serve 2-3 people. Need large frying pan with long handle on as it will go under the grill.

Eggs x 6 - well beaten
Pepper - green and red, sliced
Mushrooms - chopped
Sausage x 2 (spicy is good) - cooked and chopped/sliced
Ham/bacon - chopped up
Large handful of grated cheese

Any other things you think will go well in it.

Turn grill on high

Make sure the sausage is warmed through before in the pan. Add some oil and heat. Then add all your ingredients in one go and cook gently on the stove, till omlette begins to cook from the bottom. Do not try to turn it over, but make sure it doesn't start to burn the bottom of the pan. Keep the pan gently moving if need be.

Once one side is cooked on the bottom of the frying pan, pop the pan under the grill (make sure any plastic handle is well away from the heat) and let the omlette cook from the top. It'll slowly rise and puff up. If not sure its 100% cooked through, pop it back on the stove to just zap the bottom again and then back under the grill.

Take pan out, cut into portions and serve with salad Yummy.

This is a really funny thing - outside spain a spanish omelette has all sorts of things in it, like sausages, peppers, etc.

In spain they have three ingredients and three only: Egg, onions and potatoes - lots of potatoes.

You peel the tatties and slice and fry in a lot of oil. When they are cooked you take them out of the oil with a slotted spoon and set aside in a bowl. Then you cook chopped onion in the oil for a couple of mins - careful you dont want to burn it; then add it to the tatties. Then you beat six eggs and add salt then add to the tatties and onions and mash a little - not really mash, just crumble the potato a bit. Then you take a frying pan with a little oil and then cook the mix on both sides turning several times. The turning can be tricky, as it is heavy...but the result is lovely. It makes quite a thick omelette. You should leave it to cool for a little while before serving.

I didnt say before -about a pound of tatties and one big onion.
