i know there isnt a recipe section on the forum, i wish there was! i know alot of us are having to spend wisely atm... so lets all post our fave cheap recipes here!! =)

i'll start!

tomato & bacon soup!

2 tins tesco value chopped tomatoes
1 courgette (not really neccessary tho)
1 garlic cloves crushed
1 onion
good handful tesco value cooking bacon chopped up
grated cheese to serve
bread or pitta bread to serve
salt and pepper
few flakes of chilli if you like
oil

fry the onion garlic and courgette with salt and pepper and bacon, when brown add the two tins of toms and simmer for a while
add to a big deep saucpan and cover and simmer again for about 15 or 20 mins

add to a food blender, wizz away

and thats it! serve with warm pitta or bread and grated cheese and i like a good pinch of black pepper!

i made this yesterday and froze some too. reallly cheap!!

ps... favourite not faveourite!! ;)

Tuna pasta!!

literally pasta boiled and drained and throw in tuna mayo and some cheese, super cheap and yummy even madison loves it!!!!!

Great thread!! myt get some ideas!! xxx
 
MM I love tuna pasta, I mix the tuna with mayo, salad cream (a teeny bit of tomato sauce) sweetcorn and cucmber and then mix it on with the pasta x It's deeeelish :) x
 
Garlic and Thyme chicken, we had this last night, it was yummy:-

4 chicken thighs
2 garlic cloves crushed
2 table spoons of olive oil
2 table spoons of fresh thyme

Preheat the grill
Mix the garlic, thyme and oil in a bowl
Make 3 slits in each thigh with a sharp knife
Toss the chicken in the garlic and thyme mix
Put under the grill for 7-10 mins each side til cooked through

We had it with mash, mmm it was lovely

Philly bacon and leak pie

200g Philadelphia with chives
5 rashers of smoked bacon
2 large leaks cut into 1cm rounds
700g potatoes
75ml milk
10g bread crumbs mixed with dried herbs
1tbs olive oil

Cook potatoes
Cook bacon and leaks until leaks are slightly browned
Add half the Philly and milk to the bacon and leaks
Mash potatoes and add remainder of Philly
Spoon the bacon and leak sauce into a oven proof dish and top with the mash
Sprinkle the bread crumbs on top and grill until golden

This tastes soooo good!!
 
Butternut squash and sweet potato risotto, This is a good one for baby too. The recipe is for 2 adults, so adjust the quantities if you need to:-

100g risotto rice
150g butternut squash peeled and chopped
150g sweet pot peeled and chopped
1/2 small onion
500ml veg stock
Little squirt of Tom purée
50g cheddar cheese

Sautee onion in some oil
Add rice and stock
Cover & simmer for 8mins
Add squash and sweet pot
Cover and simmer for 12mins and then take off heat.
Add Tomato purée and cheese
When cheese is melted stir up and serve.

This leaves quite a bit of butternut squash left over so I make up some baby meals with it for freezing x
 
Chicken and leeks (an absolute favourite in our house!) Recipe for 2 adults:

2 small, or 1 large chicken breast
3 leeks
Handful of cherry tomatoes
Garlic (as much or as little as you like)
Spaghetti

Dice and brown the chicken breasts in a little oil and chopped garlic, throw in the chopped leeks until cooked, throw the tomatoes in about 5 minutes before the end just to soften then serve with spaghetti!
