brown the following in a saucepan with a little veg oil-

1 onion chopped small
1 clove of garlic chopped

add the following to the saucepan

5 chopped mushrooms
2 chopped boiled potatoes
1 tin chopped tomotoes
4 tablespoons of lowfat natural yougurt (more if you like it creamier)
1-2 teaspoons curry powder
1/2 teaspoon cumin
1/2 teaspoon fenugreek (optional, gives a curry colour)

Sring to boil then simmer for about 15-20 mins

Add your cooked meat (if desired), stir and serve with rice
