Chicken recipes needed

I picked up some chicken breasts whilst at the butchers but am at a loss what to do - am bored of everything I usually make (though might fancy a curry I guess).

Any ideas? Has to be eaten by a baby and a toddler too - so nothing with lots of salt or booze but strong flavours are welcome.
 
Soak enough rice for everyone for at least an hour then rinse in lots of cold water (I use a handful each adult-always basmati)
Fry a large finely diced onion, when it starts looking transluscent add a teaspoon of grated/dried ginger and if you like garlic add as much as you fancy and fry for a further 4 mins or so
Add half a teaspoon of cumin seeds and fry til they start 'popping'
Add curry powder or a combination of your fave spices (mine are pinch of chilli, ground corriander and ground cumin. and a teaspoon of garam masala at end of cooking)
Add half a cup of frozen peas and the same of sweetcorn or whatever veg you fancy, stir, add rice and enough water or chicken stock to cover and simmer til all water absorbed
Dice and fry the breasts in a little oil til golden and mix in with rice

This recipe is a lot easier than it seems and a lot nicer than it sounds, it's the dish I always do if I have to take to a party or whatever and goes down a treat with kids and adults, esp nice if oniion fried in butter and oil.
You can add curry sauce if it's too dry but I love it as it is. it only goes wrong if you over-stir the rice during cooking.
 
I make a nice stir fry. I fry the chicken in olive oil with fresh ginger, garlic and chilli (it's up to you how much you add, can be just enough to flavour or make it spicy depending on what the kids will eat). When the chicken is browned add spring onions and two colours of peppers chopped to the mixture. Add soy sauce (light/low salt versions are fine) to taste. I also add honey to sweeten it so I guess you'd have to leave that out?

Tis much yumness though :)
 
Thai chicken curries are yummmmmyyy, but you do need loads of ingredients so if you've already been shopping, maybe next time!!
