I've been baking today for my Grandma-in-Law's 80th birthday party and I followed a recipe from the Hummingbird bakery's cook book.
It was for lemon meringue cupcakes.
The meringue bit on the top contains egg whites and I made it by whipping the egg whites and adding boiling sugar syrup and whipping a bit more. They then went under the grill for 5 mins to brown the top (on were torched a bit more with a blow torch)
The meringue stuff is quite foamy. I don't think it is intended to be hard like a usual meringue as it is on top of a cupcake.
However, I'm not sure if the egg was 'cooked' through enough or not. I don't want to take any unnecessary risks but they are calling out to me from the kitchen
and everyone else who has eaten one today has said they are divine!
