I've been baking today for my Grandma-in-Law's 80th birthday party and I followed a recipe from the Hummingbird bakery's cook book.

It was for lemon meringue cupcakes.

The meringue bit on the top contains egg whites and I made it by whipping the egg whites and adding boiling sugar syrup and whipping a bit more. They then went under the grill for 5 mins to brown the top (on were torched a bit more with a blow torch)

The meringue stuff is quite foamy. I don't think it is intended to be hard like a usual meringue as it is on top of a cupcake.
However, I'm not sure if the egg was 'cooked' through enough or not. I don't want to take any unnecessary risks but they are calling out to me from the kitchen :lol: and everyone else who has eaten one today has said they are divine!
 
im sure it will be cooked through enough to eat a little hun. is it just egg whites? id like to say ud be fine but if its going to worry u lots then dont bother for your peace of mind x
 
I have actually made the meringue frosting, and ate a fair few (i even put WAY too much egg in). I was testing different toppings for nieces's birthday cake. It was very nice and i came to the conclusion that because of the molten sugar going in, it was fine - i didn't cook the tops either, as it wouldn't have worked out for the cake i was making. In the end, i didn't go with it, didn't think it was the best thing to feed a bunch of 4 year olds, but i had no problems with it myself. The mixture is quite warm once the sugar has gone in and you have to spread before it cools for ease, so i figure the egg has been cooked to some extent.

Don't worry I broke all the rules this week, had blue cheese and crackers...yesterday I cooked carbonara from fresh with egg yolk...can't help it because the thought of foods I would normally eat turn my stomach. Hummingbird bakery is a brilliant book, you will be fine with those meringues I'm far worse!xxx

Were they yummy then? I got given that same cook book last week for my bday from my mum, and thhat recipe had caught my eye as yummy looking.

I think it must be cooked to some extent as the ladies said, 5 mins under grill, you poach an egg for less time

If you use eggs with the red lion stamp on the shells you will be fine as they are from hens screened and vaccinated against salmonella etc, if I'm ever using a recipe with under cooked or raw eggs like with royal icing etc I make sure that's what I use. Most eggs from supermarkets have the stamp as standard, its ones from farm shops you have to watch out for.
