garlic and onion soup?!! recipe pllleeeasssse!!!! :D:D:D:D

Hi happymum! The soup is absolutely gorgeous, smells lovely while cooking :) here's the recipe:

Serves 4, cooking time 2 hours.
Ingredients:
3 large onions cut into 1/2 inch slices
1 bulb garlic, cloves seperated and peeled
565ml (1 pint) chicken stock, although I used vegetarian
1 teaspoon dried thyme
25g butter
220ml double cream ( i thought was too much and used half, next time might try creme fraiche)
1 tablespoon fresh parsley, chopped
salt and freshly ground black pepper

* Preheat oven to GM4/ 180c
* place onions and garlic in roasting tin, add 425ml of stock (3/4 pint),
sprinkle with thyme, season and dot with the butter.
* cover tightly with foil and bake for 1 and 1/2 hours stirring once or
twice.
* remove tin from oven, cool slightly then add remaining stock
blend until smooth.
* return to pan, add cream, parsley and season to taste, heat gently for
5 mins and serve ( I served with some crusty rolls and cheese)

I must say some of the produts and ingredients they use are a bit arificial but the food in general is really nice, and what i like is that they're quite generous, the plates are huge

My lunch: pork chops, roast potatoes, and peas that i fried with onions! i had the whole thing with cocktail sauce
