It is a clotted cream fudge that I make.
You'll need a jam thermometre

Ingredients
275g Caster sugar (10 oz)
100g Golden syrup (3 1/2 oz)
225g Clotted cream (8 oz)
1/2 Teaspoon Vanilla essence

Method

Place all the ingredients in a large saucepan and heat gently, stirring until sugar dissolves. Bring to the boil, cover and boil for 3 minutes. Uncover and continue to boil until the temperature reaches 116 °C / 240 °F.

Remove from the heat and beat until the mixture becomes thick and creamy.
Pour into a greased tin. Leave for 30 minutes. Mark into squares with a knife and leave until set. Cut into pieces

I thought about doing Gingerbread houses this year - I did one last year in the states - lots and lots of work, but worth it in the end!!

Not for christmas but for MIL birthday, I got a photoframe with space for about ten or so pictures and filled it with pictures of her new grandchildren and other family shots. She was so chuffed -i really love giving this type of gift. Only thing is i always end up giving a shop bought present as well.

Im gonna make my LO and goddaughter a knitted rag doll i think, got a pattern and wool somewhere lol, ill have to put pictures on when im done.

i have just ordered a sheepskin to hand make some slippers for my nanna and mum :) keep these ideas comming..

Oh wow, thanks for that! Does it make the hard crystal-like fudge or the more chewy soft fudge? I prefer the hard stuff but OH loves the softer stuff you get from shops and I don't have a recipe for that.

I've been doing a home made Xmas for years now as we can't afford it otherwise and I think that people would rather you spent time on things for them than money- especially if it's edible things!

Some things I have done are:-

Flavoured Oil- I got a huge tin/barrel of good quality olive oil and two really large kilner jars (they're not very much and you can use them for lots of things) I then put garlic cloves and rosemary in one and chillies in the other and poured the oil on top and kept them in a dark cupboard for a couple of months. I bought small glass bottles for about 80p each and decanted it putting some fresh garlic etc in with it and then tied a bow round it. Everyone loved the garlic oil although I think less people used the chilli oil as quickly! Guys seemed to like this a lot!

Mango Chutney- not as hard to make as you'd think, actually pretty easy and most people like it.

Marmalade- again, not too hard and guys liked this

Flavoured spirits- you can put various stuff in various spirits and leave them for a bit and get flavoured vodka, brandy etc etc. Just google it! I've done rose vodka and a mate did turkish delight vodka (not sure how that one turned out!) the best was blackcurrant brandy but that was because we grow a lot of blackcurrants. If you use cheap vodka from Adli etc and put it into smaller glass bottles it'll be cheap too

Fudge and toffee

Jam

Chocolate Truffles- here is my fave recipe for these, I make them with my Guides most years as it's so easy and quick:-

225g Chocolate (the recipe says plain but I generally use milk- depends on your taste totally)
25g butter
1 tbls cream, evaporated or condensed milk (I've only ever done this with condensed milk but it's very nice)
1 tsp vanilla or Rum Essence (or real Rum for adults)
2 tbls cocoa powder

1. Melt the chocolate in a medium sized bowl
2. Stir the chocolate. Cut the butter into little pieces and add it to the chocolate, stirring until it is melted
3. Stir in the cream or evap or condensed milk and vanilla essence or rum essence. Let it cool
4. Put it in the fridge for about 30 mins until it is stiff enough to handle
5. Roll small spoonfulls into balls , put the cocoa in a dish and roll the truffles in it until they're covered

Makes about 24

Variations:-
Add 75g raisins with some real Rum and make rum and raisin truffles
Add marzipan chopped up
Roll them in icing sugar or chocolate flakes or strands instead
Use White Chocolate or flavoured chocolate instead etc etc

This year I'm going to try making these:-

Someone made them at work last year and they were lush!
