You have got to make this one! I recently ate at a local restaurant and had their homemade sticky toffee pudding and fell in love with it! So much so I begged the chef for his recipe! And here it is:
300g dates
600ml hot water
1 tbsp bicarbonate of soda
120g caster sugar
120g softened butter
4 free range eggs
300g self raising flour
Mia the dates with the hot water and bicarbonate of soda and leave for one hour. Then purée in a blender.
Cream the sugar and butter together. Add the eggs, flour and puréed dates.
Place in a buttered cake tin and put in a preheated oven for 1 hour (I put it on gas mark 6/7 but the chef hasn't written a temp).
Sauce:
200g butter
100g brown sugar
1 vanilla pod (I scored mine and put the seeds in too)
250ml double cream
Melt butter in a heavy based saucepan over a med heat.
Add brown sugar, vanilla pod and cream and summer for ten minutes.
I swear this is the best sticky toffee pudding I have ever tasted in my entire life!!! X
