Expressing hind milk

Bit of a 'whats normal' question.
My expressed milk separates in the fridge, to a translucent type layer and then a thick layer. I assume this is fore & hind milk. I hardly seem to hardly have any hind milk though, its maybe a 1mm layer on top? Should it be more - I'm worried about her not getting enough fatty milk when she has an expressed bottle?

As long as she is having yellow poos then that's a good indication of her getting enough. What I tend to do is express from the same side he's fed from just after a feed that way I'm not messing with the next feed, and the bottle will definitely have hind milk x

She only gets a bottle once of twice a week tbh so it prob doesn't matter too much. I did try expressing from the boob I just fed from but if I do that I can't get more then 20ml or so :-(
