How do you make your's crispy?

I used to make mine so crispy when i lived at mum and dads but since living here (for 4 years!) i can never get them crispy! I'm sure i do everything the same as i used too!

I'm gonna make a roast later for when Tim gets home and really fancy crispy potatoes and not my normal soft ones or soft burnt ones lol
 
Par boil them so they just slightly sofy, drain in collander then sort of shake em, so they get a tiny bit bashed and rough on outside, toss in roating tin, sprinkle with some salt, then pour on the oil, shove in oven at 200*c for 20/25 mins, when done bring them out and drain on some kitchen oll to get rid of excess oil

hey I do mine the same as rosa but before putting them back in a hot tray with oil I sprinkle some flour over them and that gives them a gorgeous crispy crust!! Good luck xx
 
I think i read somewhere to sprinkle some flour on them! I think i cook mine for abit too long cos i do the same as you both but cook them for 40-45mins!!
 
Maybe your oven isnt up to temp as it should be possible an explanation as if they are in for 45 mins they should def crispen up Mrs xxx

I'll let you know how i get on later! i hope it works, i really want crispy ones!!! :D the christmas dinner thread has made me want a roast for the past couple of weeks so im making one tonight even though OH thinks i go overboard on everything! lol
 
ha love it....Ahhh I love a home made roast just cant be bothered to make them atm...once the sickness goes tho yeyyyyyyyyyyyy! Hope they work out lovely xxx
 
I do the same as Rosa and just give them a few mintues to dry off when i drain them. I also have a small amount of light Olive Oil (idea for roasting) heating in the over in the roasting pan. I then throw the potatoes into the hot oil. Be careful you don't burn yourself or anyone around you as it will spit. Then tip the tray, using a spoon, spoon a small amount of the oil over the top of the potatoes and pop them back into a hot over at about 220 degrees. I turn half way, again tip the tray and spoon little oil over the potatoes once they are turned. Cooking time about 45 mintues to an hour, depending if it is in a fan over or not.

You really don't need a lot of oil in the pan, as once it heats it will seem more than what you put in, so just a small amount.

I have also done them by putting them uncooked in a bag, mixed with rock salt, rosemary and olive oil, give them a good shake and popped them into a hot roasting tray (not the bag) and cooked them that way. This is idea for potatoes that breaks up easy even when only part cooked.

Either way they have cooked crispy, just make sure the over is hot before cooking. Hope yours work out, as there is nothing nicer than crunchy roasties ;)
 
I agree with the hot oil first - that's how my mum gets hers lovely and crispy x Really could eat some roast potatoes now after reading this!! x
 
I'll do the hot oil later, thank you!! I normally just boil the potatoes, then once in the roasting dish, pour cold oil over them then shove them in the oven! I can't wait till later now :D
 
I also par boil them, allow them to steam dry in a colander for a couple of minutes, rough them up in the colander then put in a tray with hot oil. Other people I know swear by goose fat but I hate the taste!
 
I use goose fat but only on very special occasions like Christmas! :)

same here. try less oil more salt for extra crispiness. yum!
 
Ok, I'm on stage one... Boiling the potatoes :D please say this works!!! Lol

Ooh they were lush!! Even Tim said it was the best roast I've done!! I warmed the oil up first then sprinkled them in pepper and didn't put them in the oven for as long as normal!! They were yummy!! Thanks for the help girls :D
