any good stew/casserole recipes?

as the title says really.any good ideas?i mean meat content really.whenever i make a stew on the hob the meat always seems chewy so i must be doing something wrong with a very simple dish.so has anyone got a nice recipe for me to try? :D cuts of meat?type of meat? :D :D thanx in advance
 
Thanks to Purple 13 I am ADDICTED to sausage casserole!!
I've started buying 95% pork sausages and adding them to my casserole mix :) (as recommended by Purple13 I use the casserole packet mix with my own veg) xx
 
do you have a slow cooker - make even the cheapest meat taste yum.

I tend to just bung anyhting in. I like beef stew with casserole beef, chopped carrots, onions, a tin of chopped toimatoes, water (plus a stock cube if you want) and some pearl barley. Bung in slow cooker (or oven) and just before its ready I stir in some tomato puree. Serve with dumplings - mmmmm
 
nooooo i dont have a slow cooker :( i should invest in one though.are they cheap to use?cos dont you leave them on for like 6 hrs or something?
 
I make a yummy stew :-) i use stewing beef and brown it all off in the saucepan with onions once is browned i add big chunky potatos, carrots, parsnip, swede, and leeks let that all sweat for a while and then i add the stock- i don't do measurements i just pour it in until it covers it all really well... i cook it low for a few hours and the beef is always lovely and tender..i usually add dumplings 20 mins from the end and serve it with grated cheese over the top and a lovely fresh bread like tiger bread :-)

oh god its lovely..not being vain it isnt skillful its just good hearty food!
 
mmmmmmmmmmm sounds yummy :) maybe i dont cook it for long enough :think: i only usually cook it for an hour
 
yeah cook it a bit longer on a lower heat..but get the beef on a hot heat when you cook it off to seal all the moisture in..like flash cooking!
 
I LOVE casserole! Im quiet lazy though as my method is very basic. I buy some stewing steak from the supermarket, and fry it in a pan until its all brown. pop it in me glass casserole dish add some veg and a jar of homepride casserole sauce, sometimes a crumbled oxo cube, pop the lid on and shove it in the oven at 190 and leave it for an hour and a half. lol i even buy the microwave rice to go with it. much easier and time efficient when your trying to run after a baby and ya man! :roll:

Ive given up doing it on the hob as ive found it always comes out chewy!

I also ran out of stewing steak one and only had stir fry beef cuts so used them! they were actually nicer than the stewing steak!
 
One of my favourites is oxtail, onion and carrot slow cooked for hours and hours in stout. Lovely with mustardy mash.
 
this eve i put turkey, root veg, onions, chicken stock and rosemary and thyme in a casserole pot, put it on 150 and cooked for about 3.5 hour, was nice and tender

potato,
sweet potato,
musrooms,
Tin of tomatos,
Carrots,
onion
your fave sausages.
packets of sausage cassorole mix,

Wack it all in an oven dish for time stated on packet hun.

The sweet potatos are what make it lovely for me.

I normally have mashes potato with it to.

my husband makes a lush sausage casserole but my daughter said she wouldnt eat it unless he took out the foreskins :rotfl:
