Adopting My Wife To Be's Child

Can anyone give me any advice on this please.
My wife to be has a 8 year old girl and i am wanting to adopt her but i know it can take ages to sort out.
But i had a brain wave and wasnt sure if it could be done, what i was thinking is, when she was born she didnt put down any name on the birth certificate for the father as he walked out when he heard she was pregnant. Could she not just go in to put my name down?
