Posh sandwiches

We had a Panini maker for our wedding and I want to make some posh sandwiches for our guests tonight.

So far I'm doing


Mozarella, basil and cherry toms
Beef pastrami, onion and cheese.


But need some more ideas!!!!

Funny story - my brother in law wanted a panini once when we all went out for lunch and he asked the waitress for a poonanni

ooo cream cheese (cheese and chive flavour) and thin smoked ham

or or you could have it with smoked salmon and cream cheese (cheese and chive)
