is fermented wholemeal bread safe for pregnancy?

hello,

I am a father to be. My wife has been preganant for less than 1 month.

We have had a tragic story for the first pregancy 2 years ago. My wife
had gestational diabetes mellitus at that time (we lost the first baby).
So we have been very cautious this time.

We are Asian, usually our staple food is rice. But her blood glucose level
after two hours of meal will jump to 9 point (normal level <=7.1) if she eat rice.
So she starts to eat wholemeal bread as the staple food now. We have tested it, with wholemeal bread her blood glucose level becomes normal (<6.0).

What I want to know is that if fermented wholemeal bread is safe for long term diet. I can smell slight alcohol from the fermented wholemeal bread. As we know, alcohol is not good for preganancy. We are not in UK. We can only buy fermented wholemeal bread imported from Europe. I have not found no-fermented wholemeal bread, maybe they are difficult for reservation. Very few people here have experience with fermented wholemeal bread, so I come to this forum for help.
