I'm making the cake ladies!! Hope it comes out ok :pray: It's in the oven, I keep checking it every 2 mins :lol:

Got some extra double thick cream too!! :cheer:

Well, I made a Victoria Sponge a couple of weeks ago and it turned out great!

Apart from... I must have misread the instructions because if I remember rightly, a Victoria Sponge has jam and thick, creamy, yummy cream in the middle... I misread the instructions that I thought said "double cream whisked" so I bought a pot of runny double cream, whisked it, but it stayed at the same consistancy?! :think:

Needless to say, the bottom part of the cake went soggy :( :oops:

How have I misread it? What do I use/do instead to get that lovely thick cream?! xx
 
I use the whipping cream its just thick cream lol you whisk to how you want. Its next to the double cream etc on the shelves!
 
Whipping cream whips a bit quicker. Double will thicken but it takes ages and is easier to do with a hand blender.

For an alternative you can make buttercream, but you may know this already. It goes well with a Victoria Sponge and it's really simple to make, just butter and icing sugar mixed...you do however need a fair amount of icing sugar and you can add colour if you want.

You didn't get the wrong one Dannii, I always use double cream to whip, you've just got to do if for longer, I use it as I prefer the result.

By the way don't whip it for too long as you end up with butter and butter cream :lol: , just until it's at stiff peaks stage (or until you can hold the bowl upside down and it does fall out) - like meringues

I do prefer butter cream with victoria sponges, you can make it with marge instead of butter for slightly less calories but it is much nicer with butter :D
 
I can't whip double cream. I have to get OH to do it. (never thought of the electric whisk! :doh: ) I've only ever made 1 successful sponge, the rest come out flat! Lol
