I suppose you can.. everything contains salt to some degree... Its only if you add salt you have to worry...
Alternatively.. its what I usually do... is I boil the veg up... and then use the water from the veg as a stock.. means I keep all the goodness in the food But thats because getting stock in Spain is a pain..
