I work for Sainsburys on the meat and Fish counter (used to be in charge of the Deli too) so can say with confidence that that isn't how all our stores are. I'm not saying that all employees are perfect, and that that is the only store like that, but these programmes are made to shock, so they find the worst store they possibly can.
In my store, food hygene is a massive focus, and all the colleagues that work on the counters are fully trained, and checked regularly (and with out their knowledge)to check that they are sticking to the rules.
