Thought I'd share a recipe I use to make a lovely vegetable soup.
The advantages are that it's really cheap, wholesome and a good lunch. It's only vegetables and stock so is virtually fat free and babies who are being introduced to solids tend to enjoy it too from my experience
I use a 500g packet of diced carrot and swede, you can buy these rather cheaply in your local supermarket.
4 OXO vegetable stock cubes
1 small onion (chopped)
Enough hot water to cover all the veg in the pan
You also need a blender and a large pan
Step by step:
Fill the kettle and put it on to boil
Empty the carrot/swede into the pan
Dice your onion and put it in with the other veg
Put the boiling water over the veg, enough to cover it and maybe a little more
I usually boil with a lid for about 20 minutes on a high heat
Sprinkle in your oxo cubes about 10 minutes into boiling time.
Then when the veg is soft, use a hand held blender to puree it all together, serve with buttered crusty loaf and add salt and pepper to taste
