Ideas for rice please

I never ever do anything with rice. For a start off I can't cook it, and secondly OH and Mason don't like anything spicy so thats chilli and curries out.

However, I bought a pack of long grain rice this week as I have decided I need to start doing more varied dishes for tea.
I put it in the cupboard, next to another unopened packed I must have bought about a year ago and forgotten about :oops:


Help.
 
with salad my mum does cooked rice cooled with mayo and Raisins for Braydon then adds peanuts in for the rest, its really nice :D
 
risotto is a lovely one to do. your supposed to use risotto rice, or short grain but i've done it with long grain.

put some oil or butter in the saucepan. (we use olive oil, mised herbs and crushed garlic)

add rice and stir so its covered in butter/oil

then add stock, we use vegetable stock, so its about 1 cm above the rice and simmer. everytime the water reduces add some more stock. keep stiring.

at the end if you want it creamier, add a blob of butter and stir through.


oooh just thought, if you want paella then dont stir it
 
I would use parmesan cheese rather than butter to make risotto creamy, stir it in at the end as you take off the heat when its ready to serve.

How about mexican rice?

Whatever veg you want to use, I usualy use a pepper, sweetcorn, carrot, onion
Tin of Kidney beans
1 tsp ground cumin
Chilli powder to taste (if you dont want it spicy then only use 1 tsp)
1 tin of chopped tomatoes
half a cup of rice per person
1 cup of stock per person

Cook veg in some olive oil for a few mins
Add stock cumin and chilli and cook for 1 min
Add rest of ingredients and bring to boil with lid on
Lower heat down to a gentle simmer and cook for about 30 mins or until rice is nice and soft and most of liquid has evaporated.
Add seasoning & stir
Serve into bowls then sprinkle some grated cheddar over and place under grill to melt cheese

You could do some stuffed peppers.
Spring onions
Mushrooms
Tin of mixed bean salad
Tin of chopped toms

Chop spring onions & mushrooms and cook in a little oil for a few mins
Add toms & bean salad
Cook 1/2 cup of rice with 1 cup of water
Mix rice & bean mixture together & stuff into pepper
I always add grated cheese onto pepper then place in oven at 180 and cook for 20/25 mins
 
Mum does a lovely fried rice (not healthy so only an occasional dinner)

cook rice

meanwhile fry some chopped onions
put them to one side
fry some chopped bacon
add then to the onions
fry some chicken
add that to the bacon and onions.

Once the rice is cooked make sure there is very very little oil in the frying pan (otherwise the rice spits) heat the pan, when hot add the rice, give it a good stir and fry it for a bit, add the onion, bacon and chicken, stir until it's all heated through, pour over beaten egg (1 egg per person) stir it in well, sprinkle on some soy sauce, stir it well, fry for a few more minutes and it's done.

Very simple but very tasty, spring onions or prawns or peas or sweetcorn can be added as well if you fancy.
