i am looking for some really nice healthy meals i can cook for my family

they cant be to hard to cook tho as im not a super duper cheif

oh yeah and does ne one know how to do lemon chicken?/
 
cant help wiv the lemon chicken I'm afraid but I cooked a home made ratatouille (sp) today and it was lovely and so easy

aubergines and courgettes cut into large chunks - put in a colander and salt then leave for about 1/2 hr.
onions and garlic sliced, fry until seethrough in olive oil
tomatos, skinned and cut in 1/4
green pepper, deseed and slice thinly

dry aubergine and courgette on kitchen roll then add all ingredients to onions, add pepper and cook slowly for about 45 mins until soft but not mushy

I added a little bit of water as well

if you wanted to 'spice' it up you could add curry powder or chilli, we had it with feta cheese and bread but it would be really nice with rice or pasta.

another really easy dish is tomatos and eggs!

fresh tomatos, whizz em in blender (you can peel them but I dont bother, just take off stalks etc)

then in a little olive oil with salt and pepper (herbs if you want) in a frying pan with a lid, bring them to boil and then cook until they've reduced slightly, then crack some eggs in and cover, cook until they're as hard or soft as you like them (this is like poaching them), then serve hot with some nice crusty bread. you can add potatoes to this as well but you gotta boil them first.

this gives recipes suitable for children to eat - and most of them would do the whole family. It's the website to BBc Good Food magazine - look for the magazine and the months that they do little free books on family recipes or cooking with children. They have some brilliant recipes, not too fussy. Was going to type some out then realised they're all on that website anyway :doh:

You can sign up to the website then keep your favourite recipes in a binder on there. :D
