Has anyone got a simple cookie recipe i could have please, was going to make cookies with the girls over the weekend
 
These are yummy:


Makes about 15
Takes 25 minutes to make, plus cooling
Ingredients
• 115g unsalted butter, softened
• 50g granulated sugar
• 70g light muscovado sugar
• 1/2 tsp vanilla extract
• 1 large egg, lightly beaten
• 160g plain flour
• 1/4 tsp bicarbonate of soda
• 100g milk or Bourneville chocolate, cut into chunks
Method: How to make chocolate chip cookies
1. Preheat the oven to 180°C/fan160°C/gas 4. Lightly grease 2-3 non-stick baking sheets. Put the butter and sugars into a large bowl and cream together using an electric hand whisk until pale and fluffy. Gradually beat in the vanilla and egg.
2. In a small bowl, mix the flour, bicarbonate of soda and a good pinch of salt, then add to the creamed mixture, along with the chocolate chunks. Mix until combined to a softish dough.
3. Put tablespoonfuls of the dough onto the baking sheets, spaced well apart. Bake for 8-10 minutes, then remove from the oven. Leave on the baking sheets for 2 minutes, then transfer to a wire rack to cool. Eat immediately or store in an airtight container for up to 5 days.
 
Mmmm sounds good, but here's my recipe for v. simple yummy cookies:

Ingredients for approx. 20-25 cookies:
• 200g butter
• 125g sugar
• 1 pinch of salt
• 1 egg
• 200g plain flour
• 1 teaspoon baking powder
• 150g chocolate (I used white) you need to chop it into bits - see below (I chopped each square into three or four bits) or you could use buttons or choc chips - I just like the chunky bits you get from chopping up choc bars!

Whisk/cream the butter, sugar and salt until creamy.
Add the egg, flour and baking powder to the mix.
Roughly chop the chocolate, and add two thirds or so to the dough.
Mix the ingredients together and use a tablespoon to make small circles of dough on sheets of baking paper on oven trays. (I didn't grease my paper at all and they didnt stick).
Cover with remaining chocolate then bake in a pre-heated oven at about 175°C for approx. 15mins.
Let them cool on a grid.

You do only need to put small circles of the (v.sticky!) dough on the baking paper tho as they do get bigger while cooking- also, make sure you spread them out well or as they expand you just end up with one giant cookie where they have all spread so much they morph into one! :lol:
