meal ideas please???** take a looky!

i did cambridge diet last week and lost 11 lb :cheer:
(see new post in health & beauty)
so now i need some low carb meal ideas
today i went shopping and this is what i got;

chicken fillets
cod fillets
prawns
mixed veg
carrots
swede
sweetcorn
lettuce
cabbage
tomatoes
cucumber
onion
bananas
yoghurt


i want to cut out bread, potatoes and pasta for good, so any ideas for the above apart from plain salad?
also does anyone have any veg soup recipes which are easy to follow for dummies like me???
ETA: also bought a george foreman grill to cook things on

My OH makes really good veg soup (was zero points on weight watchers).
I think though that he just used veg stock, stuck a lot of veggies in and left them on the heat... i will check with him later in case he actually used a recipe, lol.

P.S well done on the 11lb! :hug:
 
Steam brocolli
soften onion
blend
add veg stock
simmer with black pepper

(I add cream but I guess that is probably not allowed)

Cut butternut sqaush in half
roast
same as above from onion onwards

Basically steam/roast/boil any veg then blend with veg stock. Very quick & VERY yummy. I just made some squash soup & have loads for lunch tomorrow.

Roast 8 tomatoes and 8 red peppers in the oven in olive oil with a couple of cloves of garlic and basil leaves - season with black pepper - roast for an hour @ 180.

Saute some onions in a saucepan add some celery (optional) add the roasted veg and one and a half litres of veg stock (bouillon is the best) - blend with a hand blender after a bit - lovely homemade roasted tomato and pepper soup - I love making soups and this is one of the easiest - very little preparation and it is yummy!

Other ideas:

Tuna steak fried in a tiny bit of olive oil and chopped corriander served with rocket and tomato - dressed with 2 parts olive oil to one part - either red wine vingar/white wine vingar or lemon juice - with a dash of black pepper - yum - worlds easiest and nicest salad dressing.

I love cooking and rarely eat potatoes/ pasta or bread - my downfall is chocolate and biscuits

Ive found roasted veg is great and then have a fillet of meat with it, very tasty and filling and then have a WW yoghurt
 
First off make sure you have 3 meals a day, Breakfast, Lunch and Dinner, don't over eat and make sure you don't eat after a certain time at night. Before you do eat double check that you are actually hungry by drinking a glass of water. Well done on the 11lbs hun thats fantastic!!

You could have lemon chicken with veg, rice or salad.
Prawn Salad
Yogurt and Banana for pudding.

Eat lots of fruit and veg (5 a day)
Make sure you drink plenty of water and try and get some exercise, even 30 mins walking helps burn calories.

is the cambridge the same as atkins ?? i thought cutting out potatoes carbs etc was atkins ?? I wanna know what yours is, 11lbs geeeeeez girlie !

Not to put a damper on Kim, as she is aware of it, but please realise the 11lb weight loss is mostly water in the first week of the Cambridge diet. Its not really actual fat being lost in that early stage. Yes its impressive but losing water is very different from losing fat of your body.

Just don't think that the Cambridge diet will mean instant weight loss and go try it.

Kim keep drinking los of water - because your body will function so much better if everything is hydrated.
Eat 3 square meals a day and eat sensible portions, then theres no reason why youcant loose the wight steadily ad have the energy to take care of Leah and feel good as well.

Remember 2 litres day!!!!! or works out to around 4x550ml water bottles.

yeah i know it was mostly water but i weighed myself this morning and im still the same (-11lb) so im happy :)
as long as i keep going down now and not a pound up!

The zero point soup is really easy to make!

Get some marigold powdered stock, cut up all your veg (any veg you like! I used to put a WHOLE bag of spinach in...turned it a bit swamp green, but it adds loads of nutrients!) boil it all in the stock for as long as it takes to soften the veg and then whizz it in the blender!

I used to put it in a bowl in the fridge and then just scoop out a cup whenever I was peckish, and bung it in the microwave!
