Personally I would probably avoid Egypt until he's 2 and will have a good response to Typhoid vaccine. Especially if you could go on holiday to Spain instead. But I'm sure others will tell ou they took their LOs to Egypt and it was fine It's a personal choice and depends on your attitude to risk.
