Cooking question?

Can I possible peel of potatoes, carrots etc tonight put them in water overnight and cook them tomorrow????

The potatoes tend to become black that's why I was wondering. But maybe they will be fine in the water?

Potatoes are fine in salted water. Carrots i tend to bag up and pop back in the fridge rather than keep them in water xxx
