This is a traditional greek dish and tastes a lot better than it sound!
Ravithia (chick pea soup)
1/2 kilo chick peas
1 large onion finely chopped
1 cup olive oil (1/2 pint)
1 tbspn baking soda
salt n pepper
soak peas overnight
strain them, put in a bowl and mix with the baking soda, allow them to stand for about 1 hr.
wash them thoroughly to remove all the soda.
put peas in a saucepan with PLENTY of water, allow to boil and then remove the scum which has formed on the top (normally looks like white froth), then add the onion, oil, salt and pepper. Continue to boil until tender and soft.
you will need a lot of water and I find it best to check every so often it hasnt boiled down too much.
I serve this with fresh squeezed lemon juice, feta cheese and fresh bread.
