Alternative to chips...

I recently did a 5 week healthy eating cookery course at the local play centre, check me :) And one of the dishes we made were fishcakes with rice peas and sweetcorn. The rice is a really good alternative to chips and its so easy....I use 2 bags of boil in the bag rice, one small tin of peas and one of sweetcorn. Cook the rice, heat up the peas and corn in a seperate pan then drain, mix it all together and voila! A healthy alternative to chips! Isaac really likes it and it gives him 2 servings of his 5 a day :)

Now most of us are watching our weight I thought some of you might be interested :)

lol Well i thought it was a great idea specially as for some reason we always have TONS of rice in the cupboard we only ever use for risotto or curry haha

we hardly ever have chips. its only if we go to the chippy! lol


Mash or rice for us!! if i add things to the rice, alice tends to pick them out first :rotfl:

Surprisingly Isaac eats it without picking :eek: He picks at everything else but he must like the flavour of rice peas and corn :)

We had it with jerk chicken last night, was gorgeous :)
 
MMM well then whilst you recipe-ing how do you make jerk chicken. . . . yummm i feel a dinner for today being born !

I buy jerk chicken spice mix from the world food aisle at tesco. You put the chicken in a bowl then mix the spice mix, a couple of spoonfuls, with oil and some fresh lime juice which you don't need but adds more flavour then you rub it all over the chicken and then either leave in the fridge overnight or cook it there and then. I marinated it once but it didn't seem much diferent to not marinating it so I don't bother now.

I also have jerk barbeque sauce which I smother over everything I eat :)
 
I used to live with a friend who was Chinese and she always had a rice cooker going. You add cup of rice 2 of water press the button and 20 minutes you've got lovely sticky perfectly made Chinese rice. :). I love my rice cooker. Stir fried veg and plain rice ..... mmmmmm and stupidly low in fat.
 
Sounds yummy Lou :D I will def give them a go.

For healthy chips which are very tasty and low fat:

Cut up some potatoes into chips and boil for 5 minutes
Drain and place on paper towel for a few minutes
Spray a tray with fry light and place potatoes onto it. Spray frylight on top.
Bake in oven for about 30 mins

Tasty :D

At least you haven't given someone the same cookbook for christmas 2 years in a row... Nobody told us that pregnancy brain can affect both parents, as we both thought, yes, this book is a really lovely idea.... :oops:
 
Wash your spuds, cut them into wedge shapes,with the skin still on, toss in a little bit of olive ooil, salt and herbs and bake in the overn for about 40 mins. Amazing with sour cream dip or instead of chips....
