Hi Sarah

This is what we've just had for tea tonight. It's warming rather than spicy...

Chilli Lamb with Couscous
Takes 20-25 mins
Serves 4

4 tsp of chilli paste or harissa
4 lamb leg steaks
280g couscous
50g of toasted flaked almonds
100g raisins

1. Mix chilli paste with 6 tbsp of olive oil and salt and pepper. Brush around 2 tbsp of mix over the lamb.

2. Grill lamb 3-4 mins each side till browned

3. Meanwhile tip everything else into a bowl. Pour over 1pt hot stock or hot water. Cover with a plate and leave for 5 mins.

4. Fluff up with a fork and mix in remaining chilli oil mix.

5. Dish up and sprinkle with chopped coriander or parsley.

What do you think? BTW what a lovely thought.

xx

Hey sarah -

I've found that this works well, even though it's a convenience food!

You will need:

One and a half chicken breasts per person.
1 or 2 jars of "Chicken Tonight" Classic Chasseur Sauce.
Potatoes.

Preheat oven to about 170 degrees.

Dice the chicken and fry until golden brown
Cube the potatoes (about an inch cubed or a little smaller)
Put the cooked chicken and raw potatoes into a deep casserole dish.
Add the sauce until things are more or less covered - not too much though because if too much sauce it won't be nice.
Put in your preheated oven for about an hour, or until potatoes are soft.

Serve with beverages of choice, brings a smile to my OH's face!

Sue
