4 skinless, boneless chicken breasts - with the mini fillets attatched
100g plain flour
3 eggs , beaten
200g fine, dry breadcrumbs (great for using up last bits of bread!)
sunflower oil or vegetable oil, for frying


For the garlic butter:
1 large garlic clove, crushed
small handful parsley - finely chopped
50g softened butter

1. Make the garlic butter. Mix the butter, garlic, parsley and a pinch of salt in a small bowl. Spoon the mixture on to a square of cling film and roll it into a fat sausage shape! This will be cut into discs of garlic butter to insert into the chicken so pop it in the freezer for 20 mins so it hardens.
